Snickerdoodles


 

 
1 cup butter
1 1/2 cups sugar
2 large eggs 
2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
 1/4 teaspoon salt
 3 tablespoons sugar
 3 teaspoons cinnamon
 Directions: 1 Preheat oven to 350°F. 2 Mix butter, 1 1/2 cups sugar and eggs thoroughly in a large bowl. 3 Combine flour, cream of tartar, baking soda and salt in a separate bowl. 4 Blend dry ingredients into butter mixture. 5 Chill dough, and chill an ungreased cookie sheet for about 10-15 minutes in the fridge. 6 Meanwhile, mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl. 7 Scoop 1 inch globs of dough into the sugar/ cinnamon mixture. 8 Coat by gently rolling balls of dough in the sugar mixture. 9 Place on chilled ungreased cookie sheet, and bake 10 minutes. 10 Remove from pan immediately.

1 cup unsalted butter (2 sticks)
1 1/2 cups light brown sugar
2 large eggs, room temperature
1 tsp pure vanilla extract
2 1/2 cups unbleached flour
1 tsp baking soda
1 tsp salt
1 cup bittersweet chocolate chips
1 cup milk chocolate chips
1 cup white chocolate chips

1. Melt butter in heavy saucepan over medium heat. Whisking frequently, heat until butter turns golden brown (about 5-8 minutes). Let cool to room temperature.

* As SOON as the butter turns brown remove it from heat, you will know when it happens and it will have a nutty smell and look like this:

2. In separate bowl, add sugar. Pour in brown butter and whisk until smooth. Whisk in eggs and vanilla.



3.In separate bowl, combine flour, baking soda, and salt.

4. Add dry ingredients to sugar mixture, and stir until just combined. Let mixture completely cool before adding chocolate chips (or they will melt). Fold in chocolate chips.

5. Cover the bowl with plastic wrap and refrigerate overnight.


6. Preheat oven to 350 degrees. Scoop 1/8 cup portions of dough and roll with your hands to create a perfect ball. Place on a ungreased cookie sheet. Bake 8-10 minutes, until tops are set and bottoms are just turning golden brown.

Makes About 30 Cookies.

Caramel Popcorn

This recipe is from Grandma Shipton. It is the best I have found so far and it's easy to remember.  (5 bags of popcorn and five ingredients! That's it, all in ONE measurements)

5 bags of popcorn, popped

The Caramel:
1 cube butter
1 cup brown sugar
1 cup corn syrup
1 cup sweetened condensed milk
1 cup white sugar

(not so healthy eh?)

Heat ingredients over medium in a sauce pan.  Bring to boil. Stir constantly (to prevent burning on the bottom) until it forms soft ball stage.  To test the caramel drop a teaspoon of the mixture in cold water.  If you can pull out a ball of caramel then it's ready! Poor over popcorn, stir coat and enjoy.  This caramel sauce can be used on ice-cream, Christmas candy, or to dip apples in.

 I tried finding a french bread recipe on pinterest before asking my mom for this recipe. (When I talked to her yesterday I found out I had it all along. She had submitted it to a ward cookbook I received for Christmas!) The one I found online was disgusting, dense and bland :( Here's a MUCH better recipe, just ask Danny.     

1 1/8 C warm water
1 tsp sugar
1 T yeast
combine and let stand for 10 minutes.
add:
1 tsp salt
1 tsp honey (sugar works too)
3 C Flour
1 T. oil

Mix and turn onto a floured surface.  Knead dough for about 10 min or until smooth and elastic.  Shape into a ball and placed in a greased bowl, turn bowl over to grease top.  Cover and let rise till doubled in size.  Punch down and shape into a loaf, place on greased baking sheet.  Let rise another 30 min.  Preheat oven to 425 degrees.  Cut slices along the top of the loaf with a sharp knife. Lightly brush with water.  Bake for 30-35 min or until golden brown.

We ate ours warm with marinara sauce :)

Chinese Chicken Cabbage Salad

Danny and I LOVE this salad! Enjoy. 

1 head cabbage, shredded (if it's huge I will only use about half)
1 bunch green onions, diced
1 pkg. chicken flavored ramen noodles (crush noodles, remove packet to use later)
2 chicken breasts cooked and shredded
1/4 cup sesame seeds (I accidentally got honey roasted ones once, it turned out amazing!)

Mix together then toss in sauce.

Sauce:
1/4 cup olive oil
2 T sugar
1/4 red wine vinegar ( I like the pomegranate vinegar)
3 T soy sauce
Seasonings from chicken packet
1 t. salt
1 t. pepper

(I thought I had a close up, sorry I will take one next time!)

The Best No-Bake Cookies

4 C. Sugar
1 C. Margarine
8 T. Cocoa
1 C. Milk

Dissolve ingredients in a pot over medium heat. Bring to boil. Boil for ONE MINUTE.  Make sure it is to a full boil before starting the timer.  Too short will get you gooey cookies, to long hard and dry cookies!

Quickly add:

6 Cups Oats
1 T. Vanilla
1 Cup Peanut Butter

Drop cookies onto wax paper, let cool. You know they're perfect when they are a little glossy on top but still soft and moist to bite into.

Mom's Banana Bread

1/2 C. Margarine
1 C. Brown Sugar
2 Eggs
2 C. Flour
1 t. Cinnamon
1 t. Soda
1/4 t. Allspice
1/2 t. Nutmeg
1 C. Mashed Banana
1 T. Liquid (Sour milk, buttermilk, or fruit juice. I used milk with a little bit of lemon juice.)
Chopped nuts

 Mix all ingredients. Bake at 350 for 50 min. Makes one loaf.

Mom's Kitchen

  I am frequently calling/texting my mom to ask for a recipe she has.  I have been trying to figure out how I want to start recording them because I lose them!  I had been considering a cooking blog for some time and decided to combine the two.  Mom's recipe's coming soon!
